Delightful Dessert Recipes {by} Amber of Live It Out Photography…

Today I have another guest post for you by the incredible Amber of Live It Out Photography! This time it’s one for all you bakers out there…

My husband Jon and I recently baked dessert for a friend’s New Year party. And by Jon and I, I mean Jon, because I can’t cook. My skills pretty much end at the microwave. So if you need some shite easy mac or a yummy cuppa I’m your girl, otherwise thank god I married a baker. The goods were a BIG hit, so I figured I’d share the love!

Butterscotch Drops via Southern Living:

Ingredients

1 (6-ounce) package butterscotch morsels*
1 cup dry-roasted peanuts
1 cup shoestring potato sticks, broken into pieces

I realize the ingredients sound gross, but these little guys will change your life. They’re like sunshine. In your mouth. Just for fun, here’s a monkey with some butterscotch.

Recipe

Melt morsels in a saucepan over low heat. Stir in peanuts and potato sticks. Drop by teaspoonfuls onto wax paper, and cool completely.

1 (6-ounce) package peanut butter morsels may be substituted.

yields: 2.5 dozen

Deeeelish Lowfat Chocolate Chip Pumpkin Bread adapted from a Cooking Light Recipe:

Ingredients

2 cups sugar
dash of nutmeg
dash of clove
2 cups canned pumpkin
1/2 cup canola oil
1/2 cup fat-free vanilla pudding
4 large egg whites
3 cups all-purpose flour
2 teaspoons ground cinnamon
1 1/4 teaspoons salt
1 teaspoon baking soda
1 cup semisweet chocolate chips
Cooking spray

Feel free to leave out the choc chips for a more generic pumpkin bread.

Recipe

Preheat oven to 350°.

Combine first 5 ingredients in a large bowl, stirring well with a whisk. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, cinnamon, salt, and baking soda in a medium bowl, stirring well with a whisk. Add flour mixture to pumpkin mixture, stirring just until moist. Stir in chocolate chips.

Spoon batter into 2 (8 x 4-inch) loaf pans coated with cooking spray. Bake at 350° for 1 hour and 15 minutes or until a wooden pick inserted in the center comes out clean. Cool 10 minutes in pans on a wire rack, and remove from pans. Cool completely on wire rack.

I have tried BOTH of these recipes at Amber & Jons and can attest to both. The Butterscotch Drops are addictive, and better than the ingredients sound. YUM!
